The journey to a premium cashew nut doesn’t end at the harvest. In many ways, it’s just beginning. While the quality of a nut is born in the orchard, its value is preserved—or lost—in the crucial hours and days after it’s picked. The First Critical Step: Separation and Sorting

Once our farmers gently hand-pick the ripe cashew apples with their attached nuts, the clock starts ticking. The first task is to carefully separate the delicate, perishable cashew apple from the robust nut. This is done promptly to prevent any moisture or sugars from the apple from affecting the nut.

The nuts are then sorted. Any that are immature, damaged, or show signs of pest infestation are removed. This initial quality control is vital; one compromised nut can affect an entire batch during drying and storage. Only the best-looking nuts move forward.

The Art of Sun Drying: Harnessing Nature’s Power

This is perhaps the most crucial step in the entire process. Freshly harvested raw cashew nuts have a very high moisture content, sometimes as high as 25%. This moisture is the enemy of quality, as it leads to mould, spoilage, and rancidity.

We spread the sorted nuts in a thin, uniform layer on clean, raised drying platforms in a dedicated, hygienic area. We rely on the clean, powerful sun of Sierra Leone to naturally and gently draw out this moisture.

  • Why Sun Drying? Unlike artificial heat, which can be harsh and uneven, sun drying is a gradual process. It slowly reduces the moisture content to a stable level of around 8-10% without “cooking” the nut. This preserves the raw nut’s natural, buttery flavour and vital nutrients.

  • The Technique: Our farmers are experts in this art. They turn the nuts regularly to ensure even drying on all sides and cover them promptly if there’s a sudden rain shower. This process isn’t rushed; it can take several days, but this patience is the foundation of quality.

Proper drying achieves two key things:

  1. It drastically reduces the risk of fungal growth (like aflatoxin), ensuring a safe product.

  2. It causes the kernel inside to shrink slightly away from the shell, making the subsequent, difficult shelling process significantly easier and safer.

The Shield Against the Elements: Scientific Storage

Once the nuts have reached their ideal moisture level, they are no longer vulnerable to spoilage, but they are now vulnerable to new threats: pests, moisture re-absorption, and foreign odours. This is where scientific storage comes in.

We do not simply bag the dried nuts and leave them in a warehouse. We store them in a cool, dark, and dry environment. Crucially, we use hermetically sealed bags.

  • The Power of Hermetic Sealing: These special bags are airtight. Once sealed, they lock out moisture and pests without the need for any chemical fumigants. Any insects already inside the bag quickly consume the available oxygen and die, leaving the nuts perfectly protected.

  • Preserving Purity: This method also ensures the nuts do not absorb any unwanted odours from their surroundings, preserving their pure, natural taste.

This storage phase is our buffer. It allows us to aggregate nuts from many farmers and hold them in perfect condition until we have a sufficient quantity for the next stage: shelling, peeling, and grading.
